Georgia Redneck Caviar

I discovered this recipe years ago. Over the years I have adapted it and made it my own. I think we have finally arrived at the perfect melding of flavors for my family’s taste and it will long a be a family favorite here.

We used to have this at parties, but now we have it for dinner on  family movie night, family game night, etc It’s party food! But it’s full of veggies! It’s perfect for adding a ‘party atmosphere’ to a family night, which my kids adore.

(Don’t be jealous of my beautiful ‘mom-icure’! HA!)

Ingredients

  • 2 cans black eyed peas (or use leftover dried peas)
  • 3-4 large fresh tomatoes
  • 1/2 – 1 large onion
  • 1 can white corn
  • 1 can white hominy
  • 1 green bell pepper
  • 3 cloves garlic
  • 1/2 teaspoon cliantro
  • 1/2 teaspoon italian seasoning
  • salt (to taste)
  • black pepper (to taste)
  • 1/2 bottle italian dressing
  • 2 bags corn chips (for dipping)
Step 1
Drain black eyed peas if using canned, place in large bowl.
Step 2
Dice onion & tomatoes and add to peas.
Step 3
Drain corn and hominy. Add to bowl.
Step 4
Dice bell pepper and add to bowl.
Step 5
Add minced garlic.
Step 6
Add spices (cilantro, Italian seasoning, salt, pepper)
Step 7
add 1/2 bottle of Italian dressing and stir until all veggies are well coated.
Step 8
For best results, refrigerate at least 4 hours before serving.
Step 9
Serve cold with corn chips for dipping.

Canned peas work fine, but I usually use leftover black eyed peas. I find a small cool whip bowl full of peas just right. However, canned tomatoes just don’t really work in the recipe, fresh is best. But I have used various types of tomatoes.

If your children aren’t familiar with hominy, encourage them to try it. My kids say it tastes like soft popcorn.

Feel free to adjust the spices to your liking. Some people think cilantro tastes like soap, so if you’ve never tried it before, be aware, people usually love or hate cilantro.

This recipe is easy to make the day before. It’s best to chill at least 4 hours.

Serve with corn chips and pull out a game or pop in a movie and have a family party!
